When the best meet. In collaboration with the Žufánek distillery, we have created a limited edition gin like no other before.

Doing things differently, well, and exceptionally is not only our motto but also the motto of many honest producers in our surroundings. One of them is Martin Žufánek, the founder of the distillery that bears his name and became famous for producing perfect distillates with a twist. Such a twist is also carried by our freeze-dried green pepper, which inspired us to put our heads together and jointly create a gin that has no equivalent on the Czech or any other market. We have already revealed the main ingredient, namely the freeze-dried green pepper, for which we received a gastronomic Oscar. But there is much more hidden in this gin. For the very first time, Martin Žufánek decided to base the gin on a grape marc spirit in a purely Italian style. To it, he added olives, almonds, basil, lemongrass, and also neroli, the essential oil from the flowers of the bitter orange tree. In short, a little piece of Italian sunshine poured into a clear glass. When Italy meets Cambodia. Taste our perfect pepper spaghetti

Life is too short not to experiment with it. However, when you take the best pepper in the world and combine it with the greatest pasta treasure that Italy has, the result can be nothing other than a perfectly crafted Italian spaghetti concept. At the beginning, however, there was the question of whom to turn to with a request to create perfect spaghetti with a pepper base for us. In the end, we decided on a family business located in the middle of the Alpine massif Alpe della Luna near Tuscany. This is exactly where Pasta di Borgo Pace is based, where pasta preparation has been dedicated to for many generations. Local experts in the field of gastronomy and baking created a recipe for us that relies on several simple ingredients, which are crystal clear Alpine water, sunshine, and the highest quality hard wheat, and of course, the best pepper in the world grown in the Kampot province must not be missing. Processed by traditional methods The secret of the unique taste of the spaghetti lies, similar to our pepper, in the method of processing. The pasta is hung out immediately after production and dried at about 40 degrees Celsius. During this process, they gain their characteristic length and elasticity, which they acquire during 20 hours of drying. This process also defines their structure, which is not smooth like the pasta you are used to from the supermarket. Every Italian will tell you that for the sauce to hold well on the pasta, their structure must be rough and slightly floured. You do not have to fear that the roughness would transfer to the taste; on the contrary, these pastas are perfectly soft. This is also contributed to by the gentle stone grinding of semolina flour, thanks to which the flour contains fine wheat germ that softens the taste of the pasta and also provides a rich protein content. Pasta is ideal to pair with classic tomato or cream sauces, and you can never go wrong with a few shavings of Parmesan. And now there is nothing left but to wish you a good appetite.

The story of nØGinu

This is not a fairy tale, but thanks to its epic, almost unbelievable story, it could be one. About how the guys from  the Landcraft craft distillery do their job more than well, we all could be convinced last year when our joint .pepper..gin just flew off the shelves. This year, our friendship decided not only to spice it up but to add the intoxicating scent of chocolate and Sicilian oranges. Let Ondra from Landcraft speak, who beautifully wrote down our shared story, the journey that ended with the creation of a new category of circular distillates: nøGin. Or did it just begin? “We found Mr. Olšák... ... he imported organic products from Sicily, ran a gym in Mělník, and probably had orange juice vending machines everywhere. I explained to him what we were about, and he kept frowning: look, don’t take this the wrong way, but I just don’t want to sell you oranges just so you can peel the skins off them. This has to be solved somehow. Let me think it over. The next day he called us again: You know what? I’ve got it. Every Friday and Saturday I make fresh juice at the Holešovice market hall. I throw the peels into bags and then the bags into the trash. When you want them, you can always pick them up on Saturday after noon. And that was it. That gin is a category of juniper-based distillates, whose taste everyone can imagine. However, there are huge differences among individual gins: in some, there may be so little juniper that it is practically unnoticeable. Their core is formed by other herbs and additives. But the name gin is so significant that they don't omit it.  Our nørGin shows that it doesn't need a category, but it doesn't hide its origin. It is characterized by distillation in ultra-fine alcohol, where all three essences – green Kampot pepper, chocolate, and orange – were extracted separately beforehand. We found out that juniper is not needed at all for this distillate to be complex in taste and aroma. A normal label would be quite boring, we said. So we finished this rebellious work at the Butterflies&Hurricanes art house, where the artists designed the right, distinctive... A label? Not at all. These are fragments of our story. There are 19 of them in total, and only you can choose what form your nørGin will take. They represent the basic values of all of us who stand behind nørGin: circularity, ecology, sustainability, love for the planet, for our work, and for the people around us. And the recommendation from the guys at Landcraft? "Alone? Divine. With tonic? Brilliant." And we just add that the absolutely brilliant tonic is precisely their To_Nic, or the grapefruit soda from Imperial. :-)

We have new luxury packaging made from rescued cardboard

We have been happy to show you for a few years now that even design objects can be useful or even sustainable. Now we are coming with another novelty in the form of gift sets and stands made from rescued cardboard here in the Czech Republic, bringing you proof that recyclable material can be a luxurious and design packaging. It just takes a few educated and skillful hands! Yes. Our new gift sets and stands for glass test tubes with Kampot pepper were once really made of cardboard intended for simple processing by pressing. However, fate is not always scientifically straightforward, and so this cardboard was taken in hand by skillful people and sensitively transformed into design pieces with an original and minimalist look that you will want to show off. Gentle on forestry The rescued cardboard used for our sets has FSC (Forest Stewardship Council) certification, which simply guarantees that the products support the most environmentally friendly forestry. This certificate largely prevents illegal logging in forests in our country and throughout Europe. From the very beginning, our packaging has been maximally sustainable and environmentally friendly. The five-layer to seven-layer corrugated cardboard used for the special hardened cardboard can also be recycled up to three times, which helps the basic goal of this idea: to avoid unnecessary waste! The durability of the material resembles solid wood And what if I spill water on my stand? No problem! What is hidden behind .pepper..gin?

As you probably already know, pepper can be cleverly combined with a whole range of interesting ingredients that you would never have dreamed of. You may have already tried adding a pinch of pepper to ice cream or coffee. But how about trying to combine hot pepper with an even sharper gin? Although this combination may seem like a challenge only for the bravest, the opposite is true. Pepper gin will be loved by every fan of exotic flavors. True gin with a touch of exoticism If you have ever tasted gin, you have certainly noticed primarily the taste of its most important ingredient, which is juniper. However, each producer has a different recipe that gives the gin a variety of flavor tones. Our gin with Kampot pepper is a small extract of everything we love about Cambodia. In a special edition that contains only 999 bottles, you will find subtle tones of mango, coriander, complemented by citrus, ginger, ginseng, and lemongrass. Crowning it all is Kampot green pepper, which was used in the production of the gin for the very first time. We ourselves also worked on our first po(ck)gin We prepared this gin for you in collaboration  with the small craft distillery  Landcraft. These guys are incredible experimenters who see every fruit as a liquefiable extract of happiness. With their help, we put together a real unique product that we are incredibly proud of and that will please everyone. Even Cambodians! We really enjoyed the production process ourselves, squeezing fresh mango and tasting countless combinations of herbs and infusions until it was just right. Not only does our gin taste great on its own, but you can also mix an excellent drink from it. The best accompaniments are mango tonic or mango juice. During preparation, add a few berries of our  red Kampot pepper into the glass, pour in a suitable amount of gin, and finally add what is called a brake, meaning one of the above-mentioned non-alcoholic drinks. You will see that our gin will bring you a completely new taste experience that cannot be compared to any other similar drink!

Pepper chocolate. Why you won't want any other anymore

We have prepared this delicacy for you together with Jitka and Michal Herůffek, who have been dedicated to making chocolate treats for almost ten years. Despite initial difficulties in finding the right beans, they eventually managed to discover the true cocoa treasure from Belize, Guatemala, and also the Dominican Republic. Just like us, the Herůffeks source cocoa beans directly from local farmers, which they then process in their chocolate manufactory in Čejč, South Moravia. The idea to combine our Kampot pepper with chocolate had been in our minds for a long time, and when we learned about the Herůffeks and their journey, we didn’t hesitate for a second. Red pepper with chocolate is a combination that works perfectly The Herůffeks are among those producers who definitely aren’t afraid of interesting experiments, so it was not difficult at all to agree on mutual cooperation, which resulted in three different types of delicate chocolates. The chocolates are so fantastic on the first tasting that we literally made them in the blink of an eye. Dark chocolate in combination with red Kampot pepper brings with every broken piece a trip into the deep exotic jungle among wild pepper vines and cocoa trees. Milk chocolate with pepper reminds us with its delicacy how sweet life can be. But what kind of life would it be without a little excitement? Therefore, the softness of this chocolate is complemented by red pepper, which unexpectedly enriches the milky pleasure with refined, rich tones of pepper. The grand finale is represented by white chocolate . After placing a piece of white chocolate in your mouth, a small symphony of sweet tones unfolds, complemented by fruity sharp peppery nuances that you definitely won't find in ordinary chocolate. We put the chef at the grill

We invited the famous Italian chef Matteo De Carli to a barbecue – we were interested in how the best actually grill. The result surprised us! Simple combinations, a few quality ingredients, and it was ready in minutes. What did we learn from him? Don’t wait and surprise your guests before the grilling  Before we even heated the grill, Matteo made a five-minute salmon carpaccio with lemon, herbs, and  red Kampot pepper – this completely blew us away and satisfied the first hungry guests for a while. A few quality ingredients are enough  Matteo then began placing an unusual combination on the grill – octopus, juicy chicken steak, large pieces of potatoes, vegetables, and garlic – all seasoned only with quality salt and Kampot pepper. Homemade sauce  Forget store-bought sauces and prepare your own in advance – for example from  freeze-dried Kampot pepper – it’s so great that the ladies even tried it with watermelon; it basically goes with everything for dipping! Matteo reduced it with plum brandy, and the resulting taste was more than surprising. Freshness Meat alone is not enough! Make a fresh salad with strawberries as a base, then place veggie and meat options on top according to the guests’ preferences. Because when you grill simply and with fresh ingredients, you only need one thing – the final flavor, which is the figurative golden dot – for example freshly ground pepper on anything you put on the grill. Combination of flavors  Sweet, salty, sour, bitter – combine flavors, don’t separate them! That’s why a vegetable salad with sweet fruit on top works so well, that’s why guests rave about ice cream unexpectedly sprinkled with  fresh red pepper  – any extra flavor in food elevates it to the next level – don’t be afraid to experiment and you’ll be the chef of all barbecues!
