This is an area that, thanks to its coastal climate and geological conditions, enables local farmers to produce pepper of the very highest quality in the world. It's no coincidence that this pepper has earned a protected geographical indication, much like French Champagne.

BIO green fermented and lyophilized pepper brings an absolutely delicate taste of fresh green peppercorns with subtle grace.

The process of lyophilization, or freeze drying then elevates it to new heights of bořesk allure with a gentle touch of salty blossom from sea brines. The soft and delicate structure melts on the tongue and gradually unfolds in the mouth, ranging from an underpinning of gentle freshness, through pleasantly piquant spiciness, to a mild acidity and notes of fresh green pepper.

How is our fermentation technology and subsequent lyophilization of green pepper so unique?

How did we manage to transform a pepper pellet into a perfectly complexly flavored pepper pellet?

BIO Fermented Kampot pepper ocontains fresh green grains processed using the old Japanese method fermentation directly in Cambodia. A pinch of salt blossom obtained by evaporating seawater in Kampot is added to the pickled grains. During the subsequent lyophilization, the grains are dried by freezing, which removes moisture and further enhances the already refined flavor of the pepper, which we developed as the first in the world.This results in the final pepper, which is the most intense flavor explosion of Kampot pepper with a light touch of Kampot salt blossom. The pellets are ultimately more brittle, more delicate, but very intense in flavor and you can use them to season almost every dish!

Thanks to the careful selection meeting the strict requirements for the quality of the pepper balanced from Kampot, as set by the Kampot Pepper Association, only the best grains are handpicked each time. Additionally, in this case, they are protected by BIO certification, which we secure for our best farmers. The pepper is then vacuum-sealed to preserve quality and freshness during the journey to the Czech Republic, where it is further selected, packaged and delivered right to your table.

Usage

Delicately tender and lightly salted Kampot pepper balls in organic quality are amazing for the final seasoning on the plate.

And you can simply sprinkle them from the bag onto a dish. They will gently melt in your mouth and get things started with a spicy–salty orchestra of flavors. Typically, this pepper truly goes with all dishes from vegetarian cuisine through meats to desserts.

What is the difference between this and the classic freeze-dried Kampot m pepper? Thanks to fermentation, it is finally more tender and more gentle on the bite, so you don't even need Grinder or a hmožedříř!

With this pepper, you can serve all types of meats and equally amazingly season your favorite salads and side dishes.
