It is an area where its seaside climate and geological conditions allow local farmers to produce the very highest quality pepper in the world. It is no coincidence that this pepper has received protected geographical indication, much like French champagne. The individual varieties of Kampot pepper differ from each other in flavor and aroma, which you can hardly find in pepper bought at ordinary supermarkets.

Green fermented pepper brings an absolutely delicate taste of fresh green peppercorns with graceful finesse. The process of lyophilization then elevates it to the heights of divine manna with a gentle touch of salty bloom from sea salt pools. Its soft texture melts on the tongue and in the mouth gradually unfolds from a base of delicate freshness, through a moderate spiciness, to a mild acidity and hints of fresh green pepper.

What makes our fermentation and subsequent lyophilization technology for green pepper so unique? How did we manage to transform a peppercorn into a perfectly complexly seasoned pepper flake?

The fermented Kampot pepper contains fresh green peppercorns processed using the traditional Japanese fermentation method right in Cambodia. A pinch of salt flower, obtained by evaporating seawater in Kampot, is added to the pickled peppercorns. During the subsequent lyophilization, the peppercorns are frozen-dried, which removes their moisture and even enhances the already refined flavor of the pepper that we developed as the first in the world. The resulting crushing of this fully seasoned pepper produces delicate flakes that are an authentic representation of green pepper with a hint of salt and green tea.

Thanks to a careful selection process that meets the strict quality standards for Kampot pepper, as established by the Kampot Pepper Association, only the very best peppercorns are hand-picked. They are then vacuum-sealed to preserve their quality and freshness during the journey to the Czech Republic, where they are further sorted, packaged, and delivered right to your table.

Usage

Pepřové vločky are crushed after fermentation and freeze-drying. Every kitchen, where there isn’t even Grinder a mortar, will appreciate this. Thanks to two different processing methods, the flakes are especially suitable for flavoring dishes on the plate, much like pyramid sea salt is used.
