Origin

Kampot pepper is cultivated in the province of Kampot, located in the far south of Southeast Asian Cambodia.

It is an area that, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the very highest quality in the world. It is no wonder that this pepper has received a protected geographical indication, similar to French champagne. We purchase pepper from small family farms under direct trade conditions, which guarantee a fair reward for each grower, and we strive to promote this approach among other traders. Thanks to this, by purchasing from us, you not only get pepper of the highest quality but also the assurance that you are buying a sustainable and morally responsible product that helps provide its producers with medical care and education for their children..

Characteristic

Green freeze-dried pepper brings the freshest taste of green peppercorns.

In this case, expect a pepper flavor full of pungency in a very intense and rich form. The taste of green freeze-dried pepper combines fresh notes of freshly cut grass, green tea and citrus with a gentle hint of sea salt flavor.

Processing

Freeze-dried green pepper is obtained by harvesting the delicate, yet unripe grains of the pepper plant.

They are not traditionally sun-dried but undergo the so-called freeze-drying process.During this process, the grains are dried by freezing, which removes their moisture. Added Kampot salt keeps the grains fresh even during transport. Once unpacked, a drop of oil or water is enough to restore the moisture, which the freeze-dried pepper grains absorb back and regain their structure and flavoras if you just picked them from the pepper vine.

Thanks to careful selection meeting the strict quality requirements for pepper exported from Kampotset by the Kampot Pepper Association, only the best grains are handpicked. These are then vacuum-sealed to ensure quality and freshness during the journey to the Czech Republic, where they are further selected, packaged, and delivered right to your table.

Usage

Lyophilized green pepper from Kampot is the most versatile of the green peppers we offer.

Crushed, it pairs excellently with any type of meat, dark, light, game, and fish.It refreshespasta, baked dishes with cheese and mushrooms, as well as sauces. It definitely stands out in autumn soups, and you can experiment with it in desserts and ice cream, and the most discerning can also enjoy it in combination with truffles.

This pepper is suitable for grinding in a mill before soaking in liquid. Do not put soaked green lyophilized pepper in a mill.

Package

Thanks to the materials used and the special bag sealing technology, air and moisture do not reach the pepper.

This allows the grains to retain the authentic taste and aroma of Kampot pepper even after opening the bag. After emptying, you can also upcycle the bags as part of sustainability and continue to use them in a variety of other ways. We pack the pepper into resealable bags with a capacity of 20 grams. Each Package also includes a brochure that brings you the story of the best pepper in the world and introduces the world of .pepper..field.

Award

Quality is our top priority, as confirmed not only by the certifications our pepper carries, but also by the awards it receives from international competitions.

Among the most significant is the award given to our pepper in the competition Great Taste, one of the most prestigious competitions in the world of gastronomy.

However, sustainability is also important to us, which we do not perceive as just empty words, as demonstrated by the SDG’s award given to genuinely sustainable and socially responsible projects.
