Fine manual work, which has remained unchanged for hundreds of years, looks like the harvesting of coarse sea salt.

It crystallizes on the surface of special basins called "salinas",into which ocean water is driven and enclosed. The water slowly evaporates under the influence of the sun and wind, and salty crystals form on its surface.

The resulting crystals are collected by hand, without any technical intervention, only with the help of long wooden rakes. Thanks to this, the salt's structure remains consistent and the salt perfectly pure in the highest quality.

The collection and processing of sea salt is similarly managed by individual small farmsas with pepper in Kampot. The families of farmers pass down the tradition of sea salt production from generation to generation. The salt is therefore in absolute organic quality, without the need for any subsequent refining.And just like with pepper, we also buy the salt directlyfrom these farmers to ensure that they receive fair compensation for their hard work.

Usage

Thanks to its delicacy and structure, fleur de sel is primarily used as the finishing touch to a prepared dish.

Certainly does not belong in the grinder, you just need to gently crush them between your fingers and sprinkle the delicate crystals on the surface. They quickly dissolve and perfectly enhance the flavor of the dish. Moreover, if you apply fleur de sel just before serving, it will create on the surface of the dish an amazingly crystalline effect on both savory and sweet dishes.
